Chef’s Choice Diamond Hone Angle Select Model 1520 is a versatile sharpener which is designed to sharpen knives from various origins like Asian, European and American. It provides razor-sharp edges using highly precise knife guides, which position the knife automatically.
It involves a multi-stage sharpening system. It is featured with 100% diamond abrasives and patented flexible stropping polishing discs that helps create a gothic arch edge structure. Amazingly this electric sharpener can restore and recreate a 15-degree edge for Asian-style knives as well as a 20-degree edge for European and American-style knives. American and European have the same 20 degrees. Naturally, they both should be sharpened in the same slot. Asian, on the other hand, has its own slot and the third stage is for finishing both types of blades. It works effectively on fine edge or serrated blades, traditional Japanese-style single bevel edges, sports knives, and pocket knives.
The honing stage is the alternative for the steel. You can use both stage 1 & 2 to initially sharpen and begin honing the knife by using the second stage from time to time. On an average, a user have to use the first stage every six months or so.

Couple of months back I bought the Model 1520. By now I already have spent quite some time with it and is realized that my investment was a wise one. Anybody who is not willing to master the art for manual sharpening with a stone but want their knives to be as sharp as professional chefs have, should try a good electric sharpener.
In just 11 minutes, I got the best angles to hold. I was just amazed to see how quickly it worked on the 27 knives that I have. With a few passes, I got my dull knives sharpened superbly. For dull knives, probably 2 or 3 will be enough. To restore an edge, one pass should be sufficient. But using stage 2 frequently may damage the knives, saying from experience. It is still an excellent tool anybody would want in his/her kitchen. When you can literally take a knife from extremely dull to a usable state in your kitchen and that happens in less than two minutes, there is no reason you will not fall in love with this machine. At the polishing stage, just a few passes will do the job to your satisfaction level by bringing precision.
So, if you want an easy and convenient tool to get extremely sharp edges on your knives quickly, this is a great tool I would recommend. Grab this if you want to get a good burr going, and then get the finishing with another manual system.
On the downside, it is slightly noisy compared to my previous sharpener. But when it comes to performance, it is superior in many aspects. The fact is that it runs pretty quiet but when you grind off metal, it will create some annoying sound. But that happens only for a short period of time, which is nothing compared to the benefits that users get. That is why I barely see anyone complaining about its being a little noisy.
The last but not the least, post-maintenance is just as convenient as washing one’s hands. Just take off the magnet and you will see shaved off metal clinging to it.
